- 1260g whole milk
- 240g dairy cream
- 90g skimmed milk powder
- 125g sugar
- 46g dextrose
- 60g glucose syrup
- 4g xanthan gum
- 200egg yolks
- 240g pistachio paste
Instructions
In a large pan, combine whole milk, dairy queen, and glucose. Add sugar to the mixture.
Heat the composition to 80 to 90°C. Turn off the heat.
Blend the mix of powdered milk, dextrose, xanthan gum with an immersion blender.
Add the pisatchio paste and blend with the immersion blender.
Pour the mixture into a measuring jug, straining it through a chinois.
Transfer the mixture to a gelato machine and churn for 15-20 min.
